Step 1: Add first 3 ingredients to the slow cooker and cook on low for 4 hours, stirring occasionally.
Step 2: Add wine, brandy, stock, water and thyme and cook on high another 2 hours.
Step 3: Season with salt and pepper.
Step 4: To serve, sprinkle with parsley and serve with crusty bread.
