Step 1: Combine fish, curry paste, juice and coriander in a food processor and process until combined and using damp hands shape mixture into 4 patties.
Step 2: Heat oil in a large frying pan over moderate heat and cook patties for 4 minutes each side or until browned and cooked.
Step 3: Place bread roll bases on serving plates and spread with half the sweet chilli sauce and then top with snow pea sprouts, fish patties, cucumber and onion.
Step 4: Drizzle with remaining sweet chilli sauce and top with the bread tops and serve with extra sweet chilli sauce.
