Step 1: Add the water and sugar to a medium pot and bring to a light boil, stirring well to dissolve the sugar. Reduce the heat to medium low and add the apples, salt, cinnamon and allspice. Cook the apples on medium low for 15-25 minutes until they are soft and tender. The sauce with thicken as it cooks, and thicken even more after it cools.
