Step 1: Coat a wok or large skillet well with cooking spray, and heat until a drop of water sizzles
Step 2: Scramble eggs on wok; remove and set aside
Step 3: Add oil, onions, peas, shrimp and sausage (if using) to the wok and stir fry until shrimp is pink - approximately 6 minutes
Step 4: Add cooked rice, eggs and soy sauce. Stir fry for about 3 minutes
