Ingredients
FOR DRESSING
1/4 cup oil (canola oil)
3 tablespoons vinegar (or wine, it is suggested to use white vinegar, red wine vinegar, white wine, really old leftover white wine…the recipe is forgiving, use what you have!)
1 lemon, whole (juice of one lemon, about 2-3 tablespoons)
1 to 2 cloves garlic, minced
2 teaspoons berbere (or use more if you like it spicier)
FOR SALAD
600 to 800 grams tomatoes, whole (3-4 large tomatoes, or any other kind of tomatoes you have)
1 to 2 jalapeño peppers, chopped (and if desired, de-seeded for less heat)
Injera (2 pieces, torn into bite-size pieces, optional http://www.recipezazz.com/recipe/injera-ethiopian-flat-bread-26479)
*NOTE: This salad is good served with either beef sambusas http://www.recipezazz.com/recipe/ethiopian-beef-sambusas-26508 or lentil sambusas http://www.recipezazz.com/recipe/ethiopian-lentil-sambusas-26509
How to Make
Step 1:
Combine the ingredients for the dressing and pour over the chopped vegetables (and injera, if making the timatim firfir).
Step 2:
Serve chilled. Or just eat it the way it is.
