Step 1: Soak apricots in a bowl of cold water for 8 hours (or overnight). Keep in the fridge. In the morning they will be plump.
Step 2: Drain off the soaking water into a small saucepan - there should be about a cup of liquid. If not, add a little water to make up the difference.
Step 3: Add sugar and simmer for 10 minutes, stirring until the sugar dissolves and the mixture thickens slightly.
Step 4: Remove the pan from the heat and add reserved apricots. Let sit in the syrup until cool to the touch (or until needed). The syrup will make the apricots shiny.
Step 5: Peel apricots halfway open and stuff with kaymak, marscapone, or Greek yogurt. You may find a few of the apricots are a little too soft - enjoy those while you work! For stuffing, use a piping bag, although a spoon work work as well.
Step 6: Garnish with crushed pistachios and enjoy!
