Step 1: Melt butter in a lrg frying pan. Then add bacon & fry a few mins until golden & crisp.
Step 2: Add the thyme, mushrooms & leeks, cover pan & cook on low heat for 20 mins or until leeks are tender.
Step 3: HINT: The easy way to make quick work of cutting the bacon & retain uniform size of the pieces for cooking is to use your kitchen scissors to cut 1/2 in segments. Easy-peasy & done in a flash.
Step 4: MUSHROOM INFO: A chestnut mushroom is the same as a white button mushroom, but is a strain that grows just a bit browner, giving it a tan-colored top. They are very much like cremini mushrooms & about the same size, but they have a better flavor & texture than plain white mushrooms. Chestnut mushrooms are also allowed to grow into larger sizes to be sold as "Portobellos". Portobellos are often called "Flat Chestnut Mushrooms" for this reason.
