Step 1: Grind the ham shoulder with a meat grinder. You can use a blender for this also, just make sure you don't put in too much in at a time. (If making rolls, grind the onions right in with the ham)
Step 2: Put ground meat in a bowl and add mayonnaise, mustard, and relish. Mix well.
Step 3: Chill until ready to make sandwiches or rolls.
Step 4: Making Sandwiches:
Step 5: When ready to make sandwiches, put a good amount of meat filling on the slice of bread.
Step 6: Add a slice of onion, or as much as you want. (I love making these with vidalia onions, they are so sweet).
Step 7: Put the top piece of bread on, and serve.
Step 8: Making Rolls For A Party:
Step 9: Stuff the rolls to your liking. Place on a large serving plate. Cover with plastic wrap. Chill until ready to serve.
