Step 1: Trim fat from steak and slice meat into thin 1x¼" slices across the grain.
Step 2: Sprinkle with cornstarch and soy sauce. Mix and set aside.
Step 3: Bring water to a boil, add broccoli, stir. Bring to a boil again and cook 2 minutes. Drain immediately and set aside.
Step 4: Heat oil in large skillet until very hot. Add onion and ginger root and stir-fry about 30 seconds.
Step 5: Add meat and stir-fry about 2 minutes.
Step 6: Add broccoli, sherry, and water.
Step 7: Stir constantly until steaming, about 1 minute.
Step 8: Serve over rice.
