Step 1: Lightly spray an oven proof casserole dish large enough to hold all the ingredients
Step 2: Place half of the eggplant slices on the bottom of the dish, single layer
Step 3: Add half of the cooked sausage meat, cover with remaining eggplant slices
Step 4: Add the mushrooms, onions, half of the diced tomatoes and remaining sausage meat
Step 5: Add remaining tomates, then sour cream and cheese
Step 6: Cover and bake in 350f oven for 35 minutes, uncover and continue baking for 10 minutes Allow the casserole to be lovely and golden on top
