Step 1: Cut out rounds of bread with a 2 1/2-inch pastry cutter to make 20 croutes - you should get 2 rounds per slice of bread. (Use the off-cuts to make bread crumbs.)
Step 2: Lay the bread rounds on a baking sheet and brush with melted butter. Bake in a preheated oven 180-degrees Celsius / 350-degrees Fahrenheit, Gas 4, for 10 minutes until crisp and golden.
Step 3: Mix the tuna with the remaining ingredients.
Step 4: Taste and season with salt and pepper.
Step 5: Place 1 heaped tsp of tuna mixture on each croute, making sure you spread the mixture to the edges of the bread so it doesn't burn when broiled.
Step 6: Place the croutes on to a baking sheet and broil (grill) for 2 - 3 minutes until slightly brown and just beginning to melt. Serve warm.
