Step 1: Heat oil in large pot over medium high. Season beef with salt and pepper. Brown meat well on both sides. Transfer beef to crock pot.
Step 2: Lower heat to medium and add the onions to the pan and saute for 10 minutes or until golden. Add garlic and stir for 1 minute.
Step 3: Pour in beer and beef broth and stir well to deglaze the pan.
Step 4: Pour onions and beer broth over the beef and add bay leaf.
Step 5: Cook on low for 5-6 hours. Beef should be pull-apart tender. If desired the broth can be ticken with a corn starch/water mixture.
Step 6: Serve with mashed potatoes.
