Step 1: In a medium saucepan combine the water, apple juice, pumpkin, and dried apples. Bring to boiling.
Step 2: Meanwhile, in a small bowl stir together oats, brown sugar, the 1 teaspoon cinnamon, and the nutmeg. Stir oat mixture into boiling pumpkin mixture. Cook for 1 minute, stirring occasionally.
Step 3: Divide mixture among four serving bowls. Top with yogurt. If desired, serve with additional cinnamon, honey, and pumpkin seeds.
