Step 1: Crush the garlic and salt together into a paste with a mortar and pestle and rub over the meaty part of the salmon.
Step 2: Sprinkle the Emeril Essence over the meaty part of the salmon and let sit for 10 minutes.
Step 3: Heat the oil in a skillet over medium-high heat and place the seasoned side down into the skillet; cook uncovered for 5 minutes or until you have a nice thin crust over the fish.
Step 4: Turn the fish over skin side down and add 2 tablespoons water, cover and cook for another 3-5 minutes or until fish is cooked through and flakes when poked with a fork. (This will depend on how thick your fish pieces are)
Step 5: Enjoy!
