Step 1: Marinade ... Now, I find it is easiest to marinate in a ziploc bag; however, you can always use a bowl (non-reactive, glass). Add all the ingredients to the bag or bowl. and mix. Add the shrimp, and toss to combine. Close up the bag, or cover with plastic wrap; and, refrigerate at least 1 hour, up to 4 hours - but, no longer.
Step 2: Shrimp ... Transfer the shrimp from the marinade, to a sheet pan, lined with paper towels; or, I use a piece of newspaper if you have some laying around. Pat the shrimp dry; and, let the shrimp warm up a bit. You never want to cook with cold seafood. Also, make sure to discard the marinade.
Step 3: *See Note - Sauce ... Add the sriracha and honey to a small bowl or measuring cup; and mix until combined. *Note: I use 1/2 cup sriracha/2 tablespoons honey for 2 lbs shrimp; but, 3/4 cup sriracha/3 tablespoons honey for 3 lbs.
Step 4: Skewers ... I find it is the easiest way to cook them. However, you could use a grill basket; the kind you can flip over. And, you could use a inside grill pan as well. But, you would have to turn over every shrimp by hand; and that would be 60+ shrimp.
Step 5: Now, there are many ways to skewer them, 1 skewer or 2 skewers. But, in the end, you want them to lay flat, easy to turn without them rolling around; and, you never want to crowd the shrimp - otherwise, they will not get a nice sear. When using my long wooden skewers; I can get 6-7 shrimp on each skewer. NOTE: If using wooden skewers; make sure to soak them 10-15 minutes in water, if using an outdoor grill. It isn't as important using an indoor grill pan; but, it is very important when cooking outside - otherwise, they will burn.
Step 6: Once your shrimp are skewered; lay them flat on a sheet pan; and, brush both sides with the sauce.
Step 7: Grill ... I like high heat; because they take only minutes to cook. Three (3)-4 minutes per side, if that; just until they start to curl and turn pink. Shrimp will get rubbery if they are over cooked. Note: I prefer an out door grill; but, an indoor grill pan will also work well.
Step 8: Finish and Serve ... Below is a fun way to serve the shrimp for a party. But, you can serve them on a platter or in bowl; or, I love small individual party cups. I often use those clear plastic disposable ones. However you decide to serve the shrimp; don't forget the cilantro and lime wedges. Note: Use as much cilantro as you like; I know that NOT everyone is a cilantro fan. And, you can also serve these with tortilla chips or even warm grilled tortillas. ENJOY!
Step 9: FUN TO SERVE AT A PARTY - Serve the shrimp in an empty beer can. First ... empty out the beer can (or, just save your empties); then, using a can opener, take off the top. Rinse and clean your can well; then, fill your can with grilled shrimp. Layering shrimp and cilantro; and, stick a wooden skewer in the can with 2 limes wedges on it. You can use the skewer to get your shrimp out of the can. It's just a fun way to serve it for a party.
