Step 1: Place 1 tablespoon dark sesame oil in a large skillet over medium-high heat. Add ginger and garlic; cook 2 minutes or until garlic just begins to brown.
Step 2: Add red bell pepper and mushrooms; stir-fry 4 minutes.
Step 3: Add bok choy and 1/4 cup water; cook 2 minutes or until bok choy is crisp-tender and water evaporates. Remove from the heat and stir in 1 tablespoon soy sauce.
