Step 1: Season the beef strips generously with salt and pepper.
Step 2: Melt the drippings in a non-stick skillet, brown the meat on all sides and pour into crock-pot; add the peppers, apples and whole cloves to the crock-pot.
Step 3: Pour the chardonnay into the skillet and cook until reduced by half; pour into a large measuring cup.
Step 4: Add the bouillon, seasonings and xanthan gum to the reduced wine and whisk until well blended and there are no clumps.
Step 5: Pour the liquid over the contents of the crock and cover.
Step 6: Cook on high for 4 hours.
