Step 1: Cube the apples leaving the red peels on them; slice celery and add to the apples.
Step 2: Add the 3 teaspoons lemon juice and toss; add the dates and walnuts and set aside.
Step 3: DRESSING: Whip the heavy cream to soft peaks; fold in the mayonnaise, honey, and remaining lemon juice and then add the apples and toss.
