Step 1: First ... You need a stove top/oven proof pan for this dish. I prefer a non stick pan if possible. Then, prepare your chicken; by letting it set on the counter to take the chill off. And, season with steak seasoning and a bit of salt on both sides.
Step 2: Saute ... Add a little olive oil to the pan; and, bring up to medium high heat. I usually start with about half of the oil; you can always add more. Then, add the chicken; and, saute on the first side until golden brown (4-5 minutes). Flip; and, continue to cook another couple of minutes; remember, the chicken will finish cooking in the oven.
Step 3: Figs, Onions, and Sauce ... Add the remaining olive oil (if necessary), shallots and garlic; and, toss until everything is combined. Cook 2 minutes; then, add both vinegars, broth, honey, and fresh herbs. Gently mix until everything is well combined. Add the figs and tuck the herb sprigs under the chicken and onions; and, add a bit more kosher salt just on the chicken and figs - around the chicken. Then, transfer the pan to a preheated oven.
Step 4: Bake ... In a 350 degree oven, middle shelf, uncovered; for 10-15 minutes. Just until the chicken is cooked through; and, the figs are tender. Half way through cooking, I like to spoon some of the sauce over the chicken.
Step 5: Serve and ENJOY! ... That's it. You can serve wild rice on the side, which is delicious. Of how about a simple green salad. For company, cheesy risotto or a cheesy crostini would be delicious. The dish itself is quick cooking, and very easy to make.
