Step 1: Preheat oven to 400 degrees. Line a small baking sheet with parchment paper
Step 2: Slice the sweet potatoes crossways 1/4-inch thick, but make sure not to cut all the way through the potato. Place on the baking sheet and brush with half the melted butter, making sure to brush the inside of each cut.
Step 3: Bake for 30 minutes. Remove from the oven and brush with remaining butter. Return to oven for more 15 minutes, or until potatoes are almost done but not too soft.
Step 4: Remove from oven and sprinkle the inside of each with half the brown sugar. Tuck the brie slices into the cuts. Sprinkle the remaining brown sugar over the potatoes.
Step 5: Bake another 6 to 8 minutes until the brie and brown sugar are melted.
