Step 1: Pork ... Let the pork set on the counter to take the chill off. You do not want to add cold pork to the crock pot. Once it has warmed up a bit; season with the salt and steak seasoning on all sides.
Step 2: Base ... Add the onions, apples, and garlic to the crock pot; then, set the pork on top. Add the potatoes around the pork; and, pour the broth over vegetables. Season the potatoes lightly with salt and pepper; you can always re-season later. Then, add the herb sprigs and leaves on top of the vegetables; and, spread the apple butter over the roast.
Step 3: Cook ... Put the lid on - turn on low; and, let it go. Once the pork roast is almost falling apart tender, and the potatoes are just about falling apart; remove the roast to a serving platter; and, cover with foil.
Step 4: Sweet Potato Mash ... First, remove any herb stems or leaves. Then, using a slotted spoon or spider; transfer the potatoes, apples, and onions to a bowl (this is what you will make your mash in). Then, strain the braising liquid in the crock pot to a large measuring cup or small bowl; using a fine strainer. Now, the strainer will catch any leftover onions or apples ... make sure to add those to the bowl with the potatoes/apple/onion mix.
Step 5: Mash the potato/apple/onion mix in the bowl using a potato masher or, large fork; even an immersion blender will work. Add a little of the strained reserved braising liquid to thin out the mash; along with a little butter to taste. It has plenty of seasoning and richness; so, you can add more or less butter if you want. Then, don't forget to season with salt and pepper, to taste. There will be little bits of onions and apples; but, that is ok - this is a rustic mash; not fluffy mashed potatoes. After your potatoes are done; transfer to a serving bowl and cover with foil.
Step 6: Serve and ENJOY! ... After slicing the pork, which is basically falling apart; drizzle the remaining braising liquid. And, don't forget the bowl of sweet potato mash. For me, the perfect side is a simple green salad. You could always add some sauteed brussels sprouts or green beans too.
