Step 1: Use kitchen scissors to cut each chicken wing in half at the joint and place in a single layer in a glass or ceramic dish.
Step 2: Combine the maple syrup, rum sriracha or chilli sauce, paprika and cumin in a small bowl and pour evenly over the chicken wings and turn to coat in the sauce and then cover with plastic wrap and place in the fridge for 2 hours to develop the flavours.
Step 3: Preheat oven to 150C.
Step 4: Line a large roasting pan with baking paper and place the wings in a single layer in the lined pan and pour the marinade over the wings and then bake, turning occasionally, for 1 hour or until cooked through and sauce reduces and caramelizes.
Step 5: Meanwhile, to make the blue cheese sauce, place the cheese, sour cream and mayonnaise in a bowl and using a fork to mash until smooth and then add half the chives and stir to combine.
Step 6: Place the chicken wings on a serving platter and transfer the blue cheese sauce to a serving bowl and sprinkle chicken and sauce with remaining chives.
