Step 1: Cut each chicken breast half into 3 strips; sprinkle evenly with salt and pepper.
Step 2: Melt butter in a large heavy skillet over high heat. Add chicken, and cook 3 to 4 minutes or until browned. Remove chicken from the skillet; set aside.
Step 3: Reduce heat to medium. Add mushrooms and shallots to skillet, and saute until tender. Add cognac; stir well. Gradually add whipping cream, stirring constantly. Cook, stirring occasionally, 30 minutes or until the mixture is thickened.
Step 4: Return chicken to the skillet. Add avocado, and cook until thoroughly heated.
