Step 1: Mayonnaise ... Add the mayonnaise, herbs, garlic, red pepper flakes, salt; and, mix until combined. Taste, and adjust the seasoning if necessary. Refrigerate until ready to use. Note: You can always use a small food processor if you want; but, I usually just do it by hand.
Step 2: Bacon ... I like to grill the bacon on a sheet of foil; just fold up the sides a bit. You can cook the bacon directly on the grill; but, using foil; you won't get any flare ups. The bacon will take about 15-25 minutes, flipping a couple of times until lightly crisp and cooked through. I like to use a thick cut; but, not a slab bacon - just get a good quality brand from your grocery store. Remove the bacon to a plate lined with a paper towel to drain. You can reserve any drippings if you want for later on.
Step 3: Grill ... Season your grill with a non-stick spray; or, olive oil - and, bring to medium high heat.
Step 4: Tomatoes, Onions, and Bread - First add the onions; they will take the longest. About 5-7 minutes until tender, and lightly browned. Flip once during cooking. You just want to get a nice char; and slightly tender.
Step 5: Bread - I like to brush or spray the top side only with a little olive oil - but, grill on both sides until lightly golden brown.
Step 6: Tomatoes - Seasoned with salt and pepper on just one side. The tomatoes will take about 2-3 minutes per side if that. You want them soft and warm; with a little char - but, you don't want them falling apart.
Step 7: Sandwich ... Spread a little mayonnaise on the inside of each bread slice (the side you didn't oil). Add the lettuce, 3-4 tomato slices, onions, 3 slices of bacon cut in half; and the top bread slice - mayonnaise side facing down.
Step 8: Serve and ENJOY! ... Add 2 toothpicks and cut in half. Since I'm using the grill; I love to make potato or zucchini wedges/planks on the side. It's a really delicious sandwich; and, a nice play on the classic fried tomato sandwich.
