Step 1: Mint Syrup ... Add the water and sugar to a small pot; and, bring just up to a boil. Reduce to simmer (low heat); and, add the mint leaves. Simmer 5 minutes, turn off the heat; and, let the syrup cool. Strain, then, transfer to a small jar or container; and, refrigerate until chilled - and, ready to use.
Step 2: Watermelon Juice ... Cut the watermelon into cubes (remove the rind); then, puree in a blender or food processor until very smooth. I usually add about a tablespoon of water to make it puree easier. Then, add the puree to a piece of cheese cloth or fine strainer, over a bowl; and, using a wooden spoon - push the melon puree through. Believe it or not ... you can even use a ladies nylon too. I don't mind a little pulp; so I prefer the strainer method. Once strained, transfer to a measuring cup; and, refrigerate until chilled.
Step 3: Cocktail ... Add the watermelon juice, white wine, mint syrup, lime juice; and, mix to combine. Add ice; then, finish with some club soda, a slice of lime, and a sprig of mint. Now, if watermelon is out of season ... you may want to add a bit more mint syrup; adjust to your liking.
Step 4: Serve and ENJOY! ... A perfect summertime cocktail. FYI: extra syrup will last 2 weeks in the fridge - great for another round of cocktails. Also good in mojitos - or other fruit wine coolers. Try strawberry ... delicious!
