Step 1: In a small saucepan, melt 1 cup sugar; add hot coffee, stirring constantly.
Step 2: Dissolve the cornstarch in cold coffee; stir into sugar mixture. Bring to a boil to thicken; remove from teh heat. Incorporate the butter and rum. Keep sauce warm.
Step 3: To make the fritters, sift together the flour, baking powder, salt and remaining sugar. Combine the egg, milk and shortening; stir into flour mixture until smooth. Slice each banana into 3 -4 pieces; roll each piece in flour, then cover with batter.
Step 4: Preheat oil to 375-degrees Fahrenheit.
Step 5: Fry the fritters in batches until golden on all sides, about 5 minutes.
Step 6: Drain on paper towels. Place on dessert plates; pour coffee-rum sauce over the fritters.
