Step 1: Combine first 8 ingredient in a bowl, stirring with a whisk. Set aside half of the mixture. Add chicken to the bowl and toss. (can let marinade in fridge at this time)
Step 2: Heat a grill pan over medium-high heat. Coat with cooking spray.
Step 3: Add chicken; cook 5 minutes on each side or until done.
Step 4: Transfer chicken to a platter; drizzle with remaining soy mixture.
