Step 1: Cook and drain the noodles according to the package directions.
Step 2: In a medium bowl, add the sesame oil, peanut butter, honey, soy sauce, rice vinegar, garlic and ginger and whisk until well combined; the peanut butter should completely break down to create a smooth sauce.
Step 3: Pour the sauce over the hot noodles and toss to coat.
Step 4: Top each serve with slice green onion and sesame seeds if desired.
