Step 1: In a bowl, combine the spices (chile powder - garlic); toss lamb in mixture. Cover and marinate in the refrigerator for 6-24 hours.
Step 2: Soak bamboo skews in water.
Step 3: Heat grill to medium high heat and oil the grates.
Step 4: Thread meat onto bamboo skewers and grill, uncovered, turning after 5 minutes; cook until lightly charred another 4-5 minutes.
Step 5: Transfer to a plate and let rest a few minutes before serving.
