Step 1: In a large pot or dutch oven, add onion, garlic and sausage meat; cook for about 10 minutes until the meat is browned and cooked through (break the meat up as it cooks). Drain off any grease.
Step 2: Add the green bell pepper, mushrooms, water, broth, and the dried uncooked pasta; bring the mixture to a boil and cook for 5 minutes or (until the pasta is al dente).
Step 3: While the pasta cooks add one can of tomatoes to a food processor or blender and blend until smooth. Add the diced and blended tomatoes, tomato paste, and spices to the pot, add salt and pepper, and mix to combine. Bring the mixture to a boil, reduce heat and simmer for 20-25 minutes or until the spaghetti is cooked through and the sauce has thickened.
Step 4: Stir in Parmesan cheese just before serving. Serve immediately topped with additional grated Parmesan cheese.
