Step 1: Onions ... Now, these take the longest; but, they are certainly not difficult to make. Simply add the butter to a saute pan; and, bring to medium heat. I prefer to use a non stick pan. Add the onions and a pinch of salt and sugar; then, stir until combined. Reduce the heat to medium low-medium; and let them saute slowly. You do NOT want them to brown too quickly. Stir every few of minutes; but, that is it. Approximately 20 minutes later, they should be a nice golden caramel color. They are done.
Step 2: Sauce ... Add the maple syrup, cinnamon, orange juice and zest, and a pinch of salt and pepper to a small bowl; and mix.
Step 3: Apples ... As the onions cook, prepare your apples. Now, I don't peel mine; but, you can if you want to. I like a small dice for the apples; remember, this is almost like a salsa. Add the diced apples to the bowl with the sauce; and, toss to combine. Remember, you can also add some dried cranberries or cherries if you want. It is optional; but, they offer a really nice taste.
Step 4: Finish ... Add the warm caramelized onions to the apple and sauce; and, toss to combine. It's ready to serve.
Step 5: Serve and ENJOY! ... Great on chicken, turkey, ham, or pork as I mentioned. Also, good on savory corn or whole wheat waffles for a side or breakfast. It's also good on toasted crostini as an appetizer.
