Step 1: Melt butter in fry pan till frothy and put in mushrooms and cook till slightly coloured, about 5 minutes and then put in baby spinach and cook till wilted. about 30 seconds.
Step 2: Serve over slices of sour dough and season with salt and pepper to your taste and then scatter crumbled fetta on top.
