Step 1: In a large bowl toss the apples with the lemon juice and allow to stand for 5 minutes. Add the next 3 ingredients (-carrots) and toss.
Step 2: In a small bowl or jar whisk the oil with the vinegar and then pour over the apples and vegetables; season with salt and pepper and toss. Let stand for 10 minutes before serving.
