Step 1: Place all ingredients in slow cooker with 8 cups water.
Step 2: Cook on low heat until vegetables are tender, about 6 hours or high heat for 4 hours.
Step 3: Strain into large bowl, pressing vegetables to extract liquid.
Step 4: Let cool 30 minutes; taste and adjust seasoning.
Step 5: Refrigerate uncovered until cool.
Step 6: Cover and refrigerate for up to 3 days or freeze for up to 1 month.
