Step 1: Place dates, honey, orange rind, cashew spread, LSAS, coconut, cranberries and 1/4 cup pistachios in a food processor and process until well combined and a coarse mixture forms.
Step 2: Finely chop remaining pistachios and place in a small bowl.
Step 3: Press and roll level tablespoons of mixture into balls and then roll in pistachios to lightly coat.
Step 4: Place balls on a plate and refrigerate for 20 minutes or until firm.
Step 5: Store balls in an airtight container in the fridge for up to 1 week.
