Step 1: Trim the excess fat from the meat and then cut down between the bones.
Step 2: Rub the meat with oil and apply the garlic, rosemary and lemon zest to the flesh and work it in well.
Step 3: Squeeze over the juice and season really well.
Step 4: If time permits, allow the ribs to marinate for at least 1/2 hour.
Step 5: When ready to cook, heat your barbecue to low to medium (or use a grill or a very hot oven) and place the ribs flesh-side down and when this side is really brown, turn them over and cook the other side really well until it too is richly browned.
Step 6: Allow them to rest in a warm place for 5 minutes and serve with lemon wedges or vegetables such as fresh corn.
