Step 1: Mix together the mango, yogurt & sriracha sauce..Cover & refrigerate.
Step 2: Mix together the salmon, panko, egg, parsley, onion, cayenne, salt & pepper.
Step 3: Form into 4 patties.
Step 4: Heat oil in a skillet.
Step 5: Add patties and fry over medium high heat.
Step 6: Flip the patties after apprx 4-5 minutes (they should be golden).
Step 7: Continue frying until done, apprx another 4-5 minutes.
Step 8: Serve with the Mango Sriracha sauce.
