Step 1: For the sauce: heat oil, then add the shallot, thyme, and the salt. Cook for about 2 minutes, or until the shallot begins to brown.
Step 2: Pour in the vinegar and scrape the bottom of the pan to remove the browned bits. Reduce the heat to a simmer and let the liquid reduce for 2 minutes. Add the maple syrup and crushed black pepper.
Step 3: Meanwhile, heat skillet then spray with Pam.
Step 4: Season the chops with salt and pepper, then add to pan. Cook 10 minutes on each side or until pork chops are done.
Step 5: Add sauce to chops and cook to glaze do this on low so it does not burn
