Ingredients
8 large eggs (hard boiled)
1/2 cup mayonnaise
2 tablespoons shallots, finely chopped
1/4 teaspoon fresh tarragon, finely chopped (or to taste)
1/2 teaspoon Dijon mustard
2 teaspoon tarragon vinegar (can be substituted with white wine vinegar)
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
4 ounces sliced bacon (4 strips, cooked and crumbled)
