Ingredients
- 2 1/2 cup mayonnaise (Japanese mayonnaise,500 grams, could be closer to 3 cups)
- 8 tablespoons mayonnaise
- Shiro dashi base stock (2 teaspoons)
- 5 teaspoons olive oil
- 1 teaspoon oil (truffle oil, start low and go higher)
- 5 teaspoon Dijon mustard
- 1 tablespoon rice wine vinegar
- 1 tablespoon lemon juice (again start low and add)
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
