Step 1: In a small mixer add all the ingredients and whip for a full minute
Step 2: Heat a 14 inch non stick skillet lightly sprayed with vegetable oil over medium heat (6-7 on electric stove) You may have to adjust the setting according to your stove.
Step 3: Pour in the egg mixture, cover pan, cook for 5 minutes. It will cook perfectly without lifting and turning or flipping the omelet.
Step 4: Have your filling ready, put on the omelet, flip omelet in half covering the filling
Step 5: Slide onto a plate and top with salsa or whatever you planned
