Step 1: Place the flour, baking powder and salt in a mixing bowl and stir to combine.
Step 2: Add the oil and water, mix to make a soft dough. If necessary adjust with flour or water as needed so dough is soft but not sticky. Cover and let rest for 10 minutes.
Step 3: Divide dough into 4, more or less, equal pieces. Dust each piece with flour and roll into a rough circle or oval that is about 1/4 inch thickness. Can also be pressed into round shapes by hand.
Step 4: Preheat a cast iron or other heavy bottom skillet on the stove top about 3 to 5 minutes on medium high heat then spray skillet with non-stick cooking spray to coat.
Step 5: In batches, place one or two flat breads to fit in hot skillet for 2-3 minutes until dough starts to look bubbly and bottom of bread is light brown. Lightly spray top of breads with non-stick cooking spray and flip and fry on the second side for another 1-2 minutes. Transfer to a rack or paper towel to cool slightly before serving.
Step 6: Coat skillet as needed for successive batches and repeat cooking steps.
Step 7: Top with any topping. Suggestions: cream cheese, chives, tomatoes, refried beans, hummus, nut butters or jam. The list of toppings are only limited by your imagination.
