Step 1: Cook pancetta; remove when crisp.
Step 2: Add onion then garlic; cook until clear; remove.
Step 3: Add spinach; cover and cook down on low.
Step 4: Add flour to milk; pour over spinach.
Step 5: Add the onions, bacon, and garlic; cook until thick.
Step 6: Top with Fontina cheese; cover until cheese melts.
