Step 1: Preheat oven to 350F.
Step 2: Line a large, shallow baking pan with parchment paper and set aside.
Step 3: In a large bowl, combine oats, coconut, almonds, pumpkin seeds, sunflower seeds and flaxseed; mix well.
Step 4: In a medium bowl, whisk together honey, peanut butter and cinnamon until well blended.
Step 5: Add peanut butter mixture to oat mixture and stir using a wooden spoon until oat mixture is completely coated.
Step 6: Spread oat mixture evenly in prepared pan.
Step 7: Bake for 10 minutes.
Step 8: Remove pan from oven, give granola a stir, then bake another 10-12 minutes, until granola is golden brown and feels dry to touch.
Step 9: Be careful not to burn it.
Step 10: Let it cool.
Step 11: Stir in dried cranberries.
Step 12: Store in an airtight container for up to 5 days.
