Step 1: Preheat oven to 500 degrees Fahrenheit.
Step 2: Mix all ingredients together making sure all slices are coated with oil and herbs.
Step 3: Spread on a rimmed baking sheet.
Step 4: Cook for 20 minutes, keeping a close watch not to burn, until golden.
Step 5: Turn potatoes over and cook until golden crisp, 5 to 7 minutes.
