Step 1: In large pot, heat the oil over medium heat.
Step 2: Add onions and garlic and sauté until onions are translucent.
Step 3: Add the celery and carrots and salt and pepper.
Step 4: Sauté until vegetables are a la dente.
Step 5: Add crushed tomatoes, red wine, dried oregano and bay leaves and simmer covered over low heat for one hour.
Step 6: Remove cover and simmer for another hour.
Step 7: Remove and discard the bay leaves, season with more salt and pepper to taste.
