Step 1: Heat oven to 375f
Step 2: Cream together the butter, sugar and beaten egg
Step 3: Mix together the flour and salt
Step 4: Using a wooden spoon sift flour into the butter mixture, stir together working in the almonds
Step 5: Divide the dough into 4 pieces and make each piece in to 2 inch sausage. Wrap in plastic or wax paper and refrigerate until firm
Step 6: Cut the dough into 1/4 inch slices and place 1" apart on an ungreased cookie sheet
Step 7: Bake in the center of the oven for 10 to 12 minutes until they are the colour of shortbread. Do not overbake - they should not be brown.
Step 8: Store in tins in the fridge or freezer
