Step 1: Preheat oven to 450°F.
Step 2: Line a baking sheet with aluminum foil; coat the foil with cooking spray.
Step 3: Arrange the wings on the prepared baking sheet so they do not touch; season with salt.
Step 4: Bake in preheated oven until browned and crispy on top, about 20 minutes.
Step 5: Flip the wings with tongs and cook until no longer pink in the center and the juices run clear, about 20 minutes more.
Step 6: Preheat the broiler and place the wings on the top shelf of the broiler (6” from heat) and broil for 3 minutes, turn over and broil for another 3 minutes or until cooked through and no longer pink by the bone.
Step 7: Stir together the Dijon mustard, yellow mustard, honey, cider vinegar, salt, pepper and hot sauce in large mixing bowl.
Step 8: Add the wings to the bowl and toss with a spatula to coat evenly.
Step 9: Allow to sit for abut five minutes and toss again to re-coat.
Step 10: Transfer to a plate to serve.
