Step 1: Preheat oven to 350 degrees. Slice the top of the head off so every clove of garlic is exposed. Place on a small square of tinfoil (easy clean up). Drizzle with olive oil and salt to taste.
Step 2: Fold edges of tinfoil together and twist to make a completely sealed bundle. Place in oven and bake for 30-40 minutes depending on the size of the garlic. Let cool before using. Squeeze to remove the roasted cloves.
Step 3: Prepare roasted garlic (see above).
Step 4: Cook the bacon in a large skillet over medium heat, once done remove to a paper towel to drain. Leave the grease in the skillet. bacon grease from the skillet then To the hot grease, add the diced onion and cook until soft and tender, about 5-6 minutes, stirring often. Remove from heat and set aside to cool.
Step 5: To the same skillet, add the mushrooms (add in some oil if to dry) let them sit, without stirring for 3-4 minutes for a nice golden color. Flip the mushrooms and continue to cook for a few minutes until golden brown.
Step 6: In a small saucepan, prepare gravy per instructions. Once it’s thickened, add the browned mushrooms and simmer for about 5 minutes.
Step 7: In a bowl, combine the ground beef, cooked crumbled bacon, caramelized onion, roasted garlic bulb, steak seasoning, sea salt and fresh cracked pepper in a large bowl. Form into 3 oval shaped patties, not too thick or thin. Add in some oil to the same skillet, heat over over medium heat. Once it’s hot, add the salisbury steak patties and cook for 3-4 minutes on each side, or to your desired degree of doneness.
Step 8: Place the cooked steak patties on a serving dish and cover with mushroom gravy.
