Step 1: Arrange tomatoes on a baking sheet in a single layer, cut side up.
Step 2: Bake for 1 hour, until they shrink to half their original size.
Step 3: Let cool, then puree.
Step 4: Just before serving, mash cheeses together with a fork.
Step 5: Stir in tomatoes; mixture should be somewhat coarse.
Step 6: Add vodka or rum.
Step 7: Drizzle with oil and stir to mix; oil should not be completely incorporated.
Step 8: Place in a serving bowl and sprinkle with mint.
